Salad with mango, avocado and tomato

A very light and nutritious salad with mango, avocado and tomato. Simple to prepare, and refreshing and tasty. Ideal for work, school and second breakfast. A real treat for all fruit and vegetable lovers.

Ingredients for approx. 3 – 4 servings

– 1 ripe mango
– 1 ripe avocado
– 2 tomatoes juice of half a lemon
– 1 tbsp olive oil
– 4 tbsp chopped green onions
– salt, ground black pepper

Method of preparation:

  1. Wash and dry the mango, peel it, separate the flesh from the stone and dice it. Transfer to a bowl.
  2. Wash and dry avocados, cut them in half, turn the halves, take out the seed, scoop out the flesh with a spoon and dice them. Add to the bowl with the mangoes and pour lemon juice over them.
  3. Tomatoes, wash, dry, cut out the stalks and cut into cubes. Add to the bowl. Pour a tablespoon of olive oil,
  4. Add green onions, season with salt and pepper.
  5. Then stir and serve immediately or chill briefly in the refrigerator.
